Ham, blue cheese and mango chutney tart

I stole this from one of the supermarket magazines, made it last night and it was yummy, its really not good for you but would make great party food or a pizza substitute, we had a couple of slices each with some salad. It sounds like it shouldn’t work but it really really does. Just make sure not to use a sweet mango chutney, I like the Yorkshire rose one from Morrisons as its not too sweet and has huge chunks of mango. Ingredients 1 packet of pre rolled puff pastry 5 tablespoons of mango chutney big lump of your favourite blue cheese (the recipe said use dolcalatte) A few slices of you favourite ham (i used aldi black forest ham) a drizzle of olive oil Method Pre heat the oven to 200 degrees C Place the pastry on some baking paper on a nice big oven...

Coast 2 Coast update

In a couple of days we will be setting off on our Coast 2 Coast walk,  preparations had been great until last week when I got bitten whilst out walking, I had a reaction to what looks like a horse fly bite, as a result my ankle went bright red and swelled up, thankfully after a few trips to the walk in centre and the doctors and a course of antibiotics it seems to be clearing up. I’ve spent the last few days finalising the route on my tracklogs software, printing the maps to PDF so I can put a backup in IBooks on my Iphone. I’ve now just got to print them all out along with the route cards for each day. We’ve not started packing yet but most of the gear we are taking is spread around on the spare room floor while I try to decide what we should...

X-Socks Trekking Energizer Compression

A long while back James from buy x socks sent me  these Socks For me to try! I’m A big fan of x socks and have a few pars of their brilliant airforce 1’s along with a couple of other pairs and some of their awesome boxer shorts. I’ve been giving them a really thorough testing on longer walks and decided that they are most definitely going to be part of my kit that I take on the coast to coast. X socks compression are supposed to gradually compress your legs, accelerating the re circulation of blood against gravity and back to the heart. Mammut Ajungilak Air Pillow Vs Ajungilak Soft Skin Pillow

A couple of years ago some friends bought me a couple of Ajungilak Air Pillow’s for when we went wildcamping. They very quickly became our must take piece of luxury when ever we went camping, they were small, light and really comfy. For those of you not familiar with the Air Pillow, its basically a blow up pillow in a bright yellow fleece cover that packs down nice and small. The fleece means its really comfy and warm when camping although if you don’t blow it up just right it can be a little squeeky when ever you move, with it being air filled it gives you a lot of room for adjustment, unlike the fibre filled pillows on the market. Home made Gyros Pitta

Gyros was something I fell in love with the first time we went to Greece on Holiday, every time we go back I always eat way too many of them. The ingredients and way they are done vary from Island to Island and shop to shop, some use a big spit roast slab of meat (similar style to donner) some use pork chops and other use flame grilled pork loin, essentially they all end up having similar herbs and spices and presented in a similar way – usually in a pitta or flat bread with tzatziki, mustard, ketchup, onions, lettuce, tomatoes and chips…yes chips!
