Slow cooked pulled beef in red wine lasagne recipe

It’s not often I blog about food on here, in fact this blog hasn’t been updated for a while now as I’ve been that busy with so much other stuff, hopefully this post will change that and there will be a bit more outdoors stuff coming soon along with some updates on my quest to get fitter and lose more weight…although this recipe isn’t going to help with that. This is a twist on a classic lasagne which I went down a storm when I made it last week. Some of the quantities are approximate as I didn’t really measure as I went along, the key is just to taste everything as you go along. It might be quite nice with a little bit of rosemary in but I’d ran out so didn’t try it. I cooked the brisket in the slow cooker but you...

Hairy Dieters Update

It’s been a while since my last blog post on the Hairy Dieters, I’m still loosing weight and exercising, although not quite as much as I’ve been a bit busy and full of cold. I’ve been keeping up with eating mostly Hairy Dieters food mixed with my own recipes and the odd treat, I’ve even cooked a couple of recipes from the book that I’d not made before. The golden vegetable soup was really filling and really tasty, especially after I added a splash of Tabasco and some chilli flakes but the real star of the show was the bacon and asparagus flan, I substituted the asparagus for some broccoli which I’d blanched and added a few sliced mushrooms. I was a bit concerned that the pastry might be a bit soggy and the bottom and that...

The Moggy Mega Burger

As I’ve mentioned on here before, for me dieting without treats would be a nightmare and I’m not convinced i’d have lost the weight I’ve lost without them (although some would say I’d have lost more). This is one of those treats that while not healthy was so tasty I just had to share the recipe. It’s based on a 2 things, firstly a burger recipe from a burger book I got for Christmas and secondly my blue cheese and mango tart which I love the flavours of, they apparenlty shouldn’t work but they so do. The trick with getting the burgers to hold together is to get some nice quality steak mince with a little bit of fat in and to use the mince straight from the fridge, this means when the burger hits the pan it tightens up and...

Hairy Dieters and Diet update

It’s been a slow start (blogging wise) to 2013, I’ve got loads of stuff I want to write about different things including our trip to the Isle of Skye, the new walking gear that’s replaced the stuff I sold on ebay and I’ve loads of beer and food stuff to share. I’ve just not had time and we are already nearly at the end of January. The good news is I’m back  on doing the Hairy Dieters, I put on 6lbs over the Christmas Period which i’ve now just about lost. I’m still doing cooking plenty from the Hairy Dieters book but am also mixing it up with some other options and home made recipes. One of the best things I’ve had of late was the Marks and Spencer Baji Balti Cod which is currently on offer at £6 for 2 meals,...

Hairy Dieters week 19 and 20

Its the run up to Chrismas and things have been a bit hectic so here’s a quick breakdown of weeks 19 and 20, there was a parmo as a treat one night but I just made sure I went on the cross trainer the next day, my cross trainer sessions have slowed a bit but I’m still keeping my weight down..apart from 1 week where I put 2lbs on which i’ve now lost. Week 19: Cajun chicken + Harrisa chicken…. I had the harissa chicken and my wife had the Cajun chicken, served both of them with the sweet potato wedges and a big salad. Delicious and simple. Cottage pie – when I made the cottage pie a few weeks ago I seperated some portions into foil dishes I had from the meat pies, i topped with the leek and potato mash then froze them…defrosted...

Hairy Dieters Week 17 and 18

This past couple of weeks hasn’t seen much Hairy Dieters action because we’ve had a long weekend in Belgium which is in no way good for your health….the combination of strong beers and rich food is delightful though. So as a result i’ve only made 2 meals from the Hairy Dieters, the first was the steak with mushroom sauce…which was absolutely gorgeous but I still prefer using a nice bit of rib eye and griddling it. The second I re made the Cajun chicken with sweet potato wedges which was as tasty and filling as ever…although I was in the mood for some extra spice so added an extra sprinkle of chilli powder. Hopefully I’ll get back on track soon and won’t have put too much weight on at weigh in...
